You can either use buttermilk or yoghurt in this bake and since I don't always have buttermilk I used yoghurt in the bake. I've always loved lemon and yoghurt cakes - and this was another great recipe that produces a cake which is moist, fluffy and crumbly. What's special about this cake is the addition of nuts (either cashews or almonds) which added texture to the cake as you bite into it. The lemon glaze made the cake very lemony - I think in future I would leave that out as my daughters complained that it was too sour for their liking.
Mich, the texture of the cake looks fluffy and moist. I don't quite fancy lemony cakes so I guess I would leave out the lemon glaze too.

Hi Mich! I think your daughters love their cakes sweet, maybe that's why! I'm actually very fond of this cake as there's a very nice balance between sweet and sour, perfect for breakfast ;)

Hi Mich! Lemon glazed...NICE! I love citrus and sweet combination, so I naturally go for that combination over simple chocolate, although I am still crazy about chocolate. Your cake is moist and delicious. I'd be so happy if I have this cake for tea time...
