This simple butter cake is covered with a layer of fresh peaches and crunchy cashews before baking. As I couldn't find any fresh peaches at the supermarket, I used the canned ones. The cake was light and moist and goes very well with the sweet and soft peaches coated in nutmeg as well as the cashew nuts.
For some reason, all my peaches sank so I didn't get a pretty cake with peaches dotting the top. However, it was a delicious bake and I wouldn't mind having it again.

ReplyDeleteMich, I think this would be more of a "you never know what you're gonna get" in your cake. I can see that your butter cake is super moist and yummy :) Honestly, my peaches did sink a little to the bottom as well but it doesn't matter because it's still all goodness ;)

Don't think I've tried peaches with cashews in a cake before but this one looks extra delicious!
ReplyDeleteMichelle, it should be the weight of the peach. At least it didn't sink to the bottom. A way to support it is to coat it with some flour before you place on top. The dry flour can to a certain extent prevent it from dropping. The cake looks moist and can tell it is a nice piece of work.
