Almond Cookies

When I saw these delicious Almond Cookies from Mel's Pantry Kitchen, I set about making them that very night. I am a big fan of almond and I always have a bag of almond nibs in the refrigerator for baking. 


This is the first time in my life I'm making Chinese New Year cookies and I am really surprised by how easy the various cookie recipes are. It just takes a little patience rolling up the dough and egg-washing them well. I don't think I'll ever go and spend S$15 on a bottle of these almond cookies ever again.



These cookies have a wonderful texture - they are perfectly crisp on the outside but melts in the mouth inside. It is not overly sweet with a hint of saltiness which makes it highly addictive. The good thing is almonds are healthy and these cookies are made of oil (not butter), so why not indulge in more?  



Almond Cookies (About 60 cookies)
Recipe from New Year Cookies by Alan Ooi cookbook

Ingredients

List A
  • 120 g almond meal (ground almond)
  • 180 g plain flour
  • 120 g caster sugar
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
List B
  • 120 ml vegetable cooking oil (sunflower, canola or corn oil)
For Glazing:
  • 1 egg yolk (beaten)
Method:
  • Combine Ingredients A and B in a mixer and mix to form a dough. (I used my hands to rub the ingredients together till it resembled fine soft sand).
  • Scale the dough of about 7 g each rounded portion. (Use a watermelon scoop if you have one)
  • Arrange on a lined baking trays and glaze the surfaces with egg wash.
  • Bake at a preheated oven at 180 Celcius for about 15-20 minutes until lightly browned.
  • Cool well before storage.

    Ooh...am I glad to see you making this almond cookies!! My favorites! And I am sure you will make this every year from now on. This cookies selling at the 'well known bakery shop' is getting more and more expensive each year.

    Totally agree with you that I feel silly too buying CNY goodies after knowing that I can make everything by myself. The ingredients that we used are fresh with no shortening or yucky preservatives used. Don't you think that our families are so lucky to have us baking for them :D

  6. I love these! They are indeed addictive but I can't get the almond meals from my bakery supplier because they ran out of stock:( Must get it earlier next year.

  8. These are beautiful...and yes, so perfect for CNY! I know, it's always way cheaper to bake our own dessert than to pay the high price tag at the bakery. :P

  14. Oh Mich! You are absolutely right! Cookies in singapore are ridiculously expensive unless you get them from Sheng Siong! Lol might as well make your own! :) these look really amazing!

  24. actually i never thought of making almond cookies this year as my niece is also selling them but becos of the baking frenzy,i also made a small container, same recipe as yours. Agree , this is good!

  28. That's it, I'm making this! I saved the recipe from Mel's blog and it's still in the file. I'm convinced I'll be addicted to these cookies (and probably finish most by myself!!). Your cookies look PERFECT! I have almond meal in the pantry and let's hope I have enough to make this! :)

  30. Mich , I've got baking list , okay , not really but I borrowed loads of books from the library hoping ( in vain , I might say ) to bake more this month :P So far , I've baked one in my to-bake list :D Hopefully , I'll bake more this coming holiday .

    Your almond cookies look beautifully-baked and much more like store-bought ones but I bet your version is much more tastier :D
