Lemon-Glazed Buttermilk Bundt Cake

The Lemon-Glazed Buttermilk Bundt Cake from the book Coffee Cakes: Simple, Sweet and Savory by Lou Seibert Pappas is the next bake for the members of The Home Bakers. The Home Bakers  is hosted by Joyce from Kitchen Flavours. If you are keen to join us, please contact Joyce.

You can either use buttermilk or yoghurt in this bake and since I don't always have buttermilk I used yoghurt in the bake. I've always loved lemon and yoghurt cakes - and this was another great recipe that produces a cake which is moist, fluffy and crumbly. What's special about this cake is the addition of nuts (either cashews or almonds) which added texture to the cake as you bite into it. The lemon glaze made the cake very lemony - I think in future I would leave that out as my daughters complained that it was too sour for their liking.

  1. Mich, the texture of the cake looks fluffy and moist. I don't quite fancy lemony cakes so I guess I would leave out the lemon glaze too.

  10. Hi Mich,

My son is different from your daughters. He like eating sour food like vinegar and lemon. I think he will like this cake but didn't bake this due to my travels.

  13. Hi Mich,
The texture of your cake looks wonderful! I think most kids love sweet over sour food. I love the lemon glaze it as it is not too sweet and so perfect with the cake!

  19. Hi Mich! Lemon glazed...NICE! I love citrus and sweet combination, so I naturally go for that combination over simple chocolate, although I am still crazy about chocolate. Your cake is moist and delicious. I'd be so happy if I have this cake for tea time...
